Strawberry Spinach Salad

Dressing:

½ tsp lemon zest

2 Tb fresh lemon juice

2 Tb white wine vinegar

1/3 C sugar

1 Tb vegetable oil

1 tsp poppy seeds

Salad:

¼ C sliced almonds, toasted

1 ½ C quartered strawberries

½ cucumber, sliced and cut in half

¼ red onion sliced into thin slices

6 oz baby spinach
