Strawberry Spinach salad

Strawberry Spinach Salad


Dressing:
½ tsp lemon zest
2 Tb fresh lemon juice
2 Tb white wine vinegar
1/3 C sugar
1 Tb vegetable oil
1 tsp poppy seeds

Salad:
¼ C sliced almonds, toasted
1 ½ C quartered strawberries
½ cucumber, sliced and cut in half
¼ red onion sliced into thin slices
6 oz baby spinach


Bran Muffins

Refrigerator Bran Muffins ***Time-Saver***

1 C boiling water
1 C Oat-Bran
½ C margarine
1 ½ C sugar
2 eggs
2 ½ C flour
2 ½ tsp baking soda
½ tsp salt
2 C milk
2 C All-Bran bran buds

Mix water and oat-bran and let stand for 5 minutes. Mix margarine, sugar and eggs together. Add flour, soda, and salt. Mix. Add moistened bran. Alternate adding All-Bran and milk. Mix well. Bake at 400 for about 15 minutes. Batter will keep a few weeks in the refrigerator. You may need to add more milk after the first night of being kept, as the bran will soak up liquid.

Banana Bread

The Best Banana Bread


½ C margarine
2 eggs
1 C sugar
3 mashed bananas
2 C flour
1 tsp. baking soda
½ C chopped nuts

Mix everything together and pour into lightly greased loaf pan. Bake at 350 for 45-50 minutes.
Can also be made into muffins if baked in muffin pan.


Blender Coconut Pie

Blender Coconut Pie


2 C milk
1 C sugar
4 eggs
½ C flour
6 Tb butter or margarine
1 tsp vanilla
½ tsp salt
1 C coconut

In blender combine everything except the coconut. Blend 10 seconds, scrape sides and blend another 10 seconds. Add coconut, blend 2 seconds. Pour into greased pie dish. Bake at 350 50-55 minutes or until center is done. Serve warm.


Banana Cookies

Mom’s Banana Cookies


½ C Crisco
1 C brown sugar
2 eggs
1 C mashed banana
2 C flour
2 tsp flour
2 tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ tsp cinnamon
¼ tsp ground cloves
½ C chopped nuts

Mix wet ingredients and add sifted dry ingredients. Mix well. Chill one hour.
Preheat oven 375. Drop teaspoonfuls 2” apart on lightly greased cookie sheet. Cook 8-10 minutes.
Cool and frost.

Lemon-Butter Icing


1/3 C butter or margarine
3 C powder sugar
2 Tb lemon juice

Cut Out Sugar Cookies

Cindy’s Cut-Out Sugar Cookies


1 ½ stick margarine
2 C sugar
2 eggs
1 tsp vanilla
1 tsp baking soda in 1 TB water
1 tsp baking powder
dash of salt
3-3 ½ C flour

Bake at 350 for about 8 minutes or until edges are lightly browned.

Icing:
½ stick margarine
powder sugar
milk
food color


Lemon Curd

Lemon Curd


¾ C sugar
1/3 C fresh lemon juice and some grated rind
½ C butter
3 eggs, beaten

put everything in top of double boiler over hot water. Stir until well blended and begins to thicken. Pour into hot, sterile jars. Water bathe 10 minutes to seal.
